Tropical Fruit Popsicles with a hint of Saffron

1 cup fresh pineapple, cubed

1 cup fresh seasonal mangoes, cubed

2 kiwi fruits, cubed

2 tablespoons coconut milk

A pinch of saffron strands

Method  Method

In a blender jar combine the saffron strands pineapple and mangoes to form a puree, keep it aside.

Clean the blender and add in the kiwi fruit along with the coconut milk and blend to combine.

Distribute the mango-pineapple-saffron puree equally among 8 - 10 popsicle molds, until 2/3 rds full.

Top with the kiwi and coconut puree.

Now insert a popsicle stick, cover with a lid and freeze for a minimum of 6 hours, though overnight is best.

Serve cold!

Feel free to add in some honey if you desire, but using fresh seasonal fruits with their natural sweetness is ideal.
