Kaladi Paratha Recipe | Authentic Jammu Cheese Stuffed Paratha

For the Dough

  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon oil or ghee
  • Water as required

For the Filling

  • 200 g Kaladi cheese, grated or thinly sliced
  • 1 small onion, finely chopped (optional)
  • 1-2 green chilies, finely chopped
  • 2 tablespoons fresh coriander, chopped
  • ½ teaspoon black pepper
  • ½ teaspoon red chili flakes (optional)
  • Salt to taste (use sparingly as Kaladi may already be salty)

For Cooking

  • 2-3 tablespoons ghee or butter 

Method  Method

Step 1: Prepare the Dough

  1. Mix whole wheat flour, salt, and oil.
  2. Gradually add water and knead into a soft dough.
  3. Cover and let it rest for 15-20 minutes.

Step 2: Prepare the Filling

  1. Grate or finely chop the Kaladi cheese.
  2. Mix with onion, coriander, green chilies, black pepper, and chili flakes.
  3. Combine everything well.

Step 3: Stuff the Paratha

  1. Divide the dough into equal portions.
  2. Roll one portion into a small circle.
  3. Place the Kaladi filling in the center.
  4. Seal the edges and gently roll into a medium-thick paratha.

Step 4: Cook

  1. Heat a tawa over medium flame.
  2. Cook the paratha for 1-2 minutes on one side.
  3. Flip and apply ghee or butter.
  4. Cook both sides until golden brown and crispy while the Kaladi melts inside.

  1. Use fresh Kaladi for the best stretchy, cheesy texture.
  2. Cook on medium heat so the cheese melts without burning the paratha.
  3. Avoid overfilling to prevent the stuffing from leaking.
  4. Add finely chopped capsicum or grated carrots for extra crunch and nutrition.
