For the Pakoda

  • 250 g Kaladi (cut into thick slices or cubes)
  • 1 cup gram flour (besan)
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon carom seeds (ajwain)
  • Salt to taste
  • A pinch of baking soda (optional)
  • ¾ cup water (adjust as needed)
  • Oil for deep frying

Method  Method

Step 1: Prepare the Batter

In a large mixing bowl, combine gram flour, red chili powder, turmeric, carom seeds, salt, and baking soda. Gradually add water while whisking until you achieve a smooth, lump-free batter with a medium-thick consistency.


Step 2: Prepare the Kaladi

Slice the Kaladi into thick rectangular pieces or cubes. Pat them dry with a kitchen towel to remove excess moisture before coating.


Step 3: Heat the Oil

Heat enough oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into it. If it rises immediately without browning too quickly, the oil is at the right temperature.


Step 4: Coat the Kaladi

Dip each Kaladi slice into the prepared batter, ensuring it is evenly coated on all sides.


Step 5: Fry Until Crispy

Carefully place the coated Kaladi pieces into the hot oil. Fry in small batches for 3–4 minutes, turning occasionally until they become crispy and golden brown.

Remove using a slotted spoon and place on paper towels to drain excess oil.
