Whole wheat flour- 1/2 cup

Sunflower seed flour -2 tablespoons, roasted

Almond  powder - 1/4th cup

Carrot- 1/2 cup, grated

Black soft dates - 12

Coconut milk- 1/2 cup

Water ½ cup

Extra virgin olive oil- 1/4th cup

Baking powder- 1 teaspoon

Baking Soda – ½ teaspoon

Cinnamon powder- 1 teaspoon

Dates- 6, halved

Pre-baking preparation:

Dry roast wheat flour on hot griddle (tawa) for 2 minutes. Sieve the flour, baking powder, baking soda, and cinnamon powder. Add the almond flour and sunflower seed powder. Add grated carrots. Mix well and keep aside.

Deseed the dates and chop them. Soak the dates in boiling water for 10 minutes then blend the dates to a smooth paste. Add coconut milk and extra virgin olive oil, blend everything together to make a smooth paste.

Mix this wet mix into the wheat flour mix. Mix well so that everything combines well. If the mixture is too dry then add little coconut milk. The texture will be similar to an ick paste.

Lets Bake:

Preheat oven in 200 degrees for 10 mins. Line up the muffin tray with paper cups. Put the mixture in each muffin cups. Insert halved dates in the le of each muffin mix. Tap the tin on the top so that air bubbles if any shall be released.

Bake it in the in 180 degrees C for 25 mins. Insert a knife or grill stick to check if it comes out clean.

The muffins are ready to serve to your kids.
