Sri Lankan cinnamon, or Ceylon cinnamon (Cinnamomum verum), is often referred to as “true” cinnamon. It comes from the inner bark of a small evergreen tree native to Sri Lanka and is considered the highest quality cinnamon in the world.
It has a light tan-brown color, thin, delicate layers, and a mild, sweet, and subtle flavor—unlike the stronger, spicier Cassia variety. The quills are soft and can be easily broken or ground by hand.
Ceylon cinnamon is prized not only for its refined flavor but also for its low coumarin content (a natural compound that can be harmful in large amounts), making it a safer choice for regular use in food and herbal remedies.
